Spinach and Ricotta Cheese Enchiladas

  • 1 package frozen spinach, drained and squeezed
  • 1 tsp margarine
  • 1 onion chopped
  • 2 cups grated cheddar
  • 1 cup ricotta or cottage cheese
  • 1 cup chopped brocolli
  • ½ cup salsa
  • 1 tsp cumin
  • 1 tsp garlic salt

  • Saute the onion in margarine
    Add drained and squeezed spinach to mixture
    Add cottage cheese to mixture
    Add broccoli, uncooked
    Add salsa, cumin, garlic salt
    Put mixture into tortilla shells, roll up
    Place in baking tray, cover with lots of salsa and cheese
    Bake at 350 degrees for 25 to 30 minutes
    Fills 10 large tortillas.
