Cream of Cauliflower Soup

  • 1 large cauliflower
  • 1 white onion, thinly sliced
  • 2 tbsp butter
  • 1 ½ liters light vegetable stock
  • salt and pepper to taste
  • parsley to garnish

-Cut up cauliflower into small pieces
-Wash in cold water and drain
-In soup pot over medium high heat, saute onion and butter until translucent
Add cauliflower and a little stock
Season well
Stew lightly for 10 minutes
Add remaining stock to cover and cook gently 15 - 20 minutes
Until cauliflower is tender at the stem
Puree soup in blender while still hot
Check for seasoning
Reheat and serve
Garnish with parsley
