Cauliflower Pasta Salad

Dressing
- 2 tbsp sour cream
- 2 tbsp red wine vinegar
- 2 shallots
- 1 clove garlic
- 1\4 tsp salt
- 1 tbsp dijon mustard
- 1\3 cup olive oil
- ground pepper
- 2 tbsp snipped chives
- 2 tbsp chopped parsley
Salad
- 1 lb cauliflower
- 8 ounces pasta
- 4 sliced sundried tomatoes
- 1\2 cup chopped green onion
- 1\4 cup chopped parsley
1. Cook cauliflower for 2 minutes in boiling water
2. Cook the pasta for the appropriate time in water cauliflower was cooked in
3. Add sundried tomatoes that have been soaked in water according to package directions
4. Add green onion and parsley
5. Add dressing
